A lovely stocking filler or an addition to a christmas foodie hamper - Or just for your own brekkie, lunch or supper - This granola won't let you down!
You Will Need:
8 Cups Jumbo Irish Porridge Oats (we use Killbeggan Organic)
4 cups Spelt Flakes
1-2 cups Mixed Seeds
1-2 cups Nuts
5 tablespoons (it's Christmas) of Smoked Spruce Syrup
1 cup Fresh Cranberries
1 cup Dried Fruit
1 - 2 Tablespoons Rapeseed Oil
(All of these measurements are guidelines - you can adjust, add or omit anything to your own liking).
Pre-heat your oven to 180º
Place all of your ingredients, except for the dried fruit and fresh cranberries into a large bowl.
Stir with a spoon, to make sure everything is nicely mixed and coated with the oil and syrup.
Pour into a large baking tray & cook until nicely toasted, (approx 20 mins), tossing and turning a few times.
Meanwhile place you fresh cranberries into an oven proof dish, pour over a little more syrup (I used my Pine No.2 Syrup as it is fruitier than No.1). Place in the oven for approx 15 mins or until they burst and cook.
Once your Granola is golden and ready, take out of the oven, add the cooked cranberries and dried fruit, stir and allow to cool.
When cool, package in jars, clear bags or gift to your liking.
